Joel Scott Odhner, co-owner of Philadelphia’s first raw restaurant and juicery — JAR BAR, and one of the creator’s of Catalyst (a juice cleanse company) is well known throughout the East Coast for his decidedly delicious raw creations (namely his signature chocolate mousse pie) as well as his extensive knowledge of all things health and wellness.
Having grown up in the restaurant industry, Joel worked and trained alongside his father, Bryan Odhner, in the family’s five successful restaurants throughout the Philadelphia suburbs. Joel attended college in New England on a hockey scholarship. Post college, Joel served six years in the US Marine Corps Special Forces. Upon return, he joined the family business by managing two of the restaurants prior to his first solo project. Arugula’s, a 100-seat, Cal-Italian inspired menu in Huntingdon Valley, was Joel’s first stake into restaurant ownership. The much loved eatery soon grew to include specialty catering, both on and off site and was successful.
Joel increasingly found himself motivated to explore new avenues of health and his search for a better way to eat and live led him to the raw foods diet that consists solely of uncooked foods with life-giving enzymes. He became inspired to combine his new found knowledge with his love of cooking to create a food service called “Raw Lifeline” which carved the way for Catalyst and JAR BAR, giving Joel extensive hands-on experience in creating not only extremely healthy foods, but also foods that are extremely delicious. In fact, Joel prides himself on developing raw “junk food” - healthy, raw versions of typical American indulgences. Joel’s 12 years as a raw/vegan chef established him as one of the most successful and talented raw food chefs in the region and has him looking forward to the growth of both of his raw-based babies. JAR BAR has just opened its second location, an express version in Philadelphia’s Main Line.
