Growing up in the small college town of State College, PA native Eric Paraskevas always knew that the traditional educational route simply wasn’t for him. He wanted something different, something unique and creative, and he just needed to find his niche. He found that in the kitchen.
In 2001, Eric relocated to Philadelphia in the pursuit of a bachelor’s degree in Culinary Arts at the Restaurant School at Walnut Hill College. Upon graduation in 2004, Eric began to work his way up in local Philadelphia restaurants such as the Happy Rooster, The Continental and Lolita, where he would eventually become chef de cuisine and ultimately have the opportunity to hone his creative instincts. In 2009, Eric moved on to his first independent position as executive chef. He has since successfully opened and operated the kitchens of Slate and Terra. He is highly involved with several important organizations on both a local and global level, including the National Foundation for Celiac Awareness, The American Red Cross Foundation, The American Breast Cancer Society, as well as being an avid supporter of local farms and businesses.
Chef Eric’s philosophy is simple. Good food, beautiful plates and a proper dining experience is ultimately about simplicity.
