Moles

The fact that you're Mexican and having difficulties locating gluten-free recipes leaves me thinking that you might be Northern Mexican. Some of the Central Mexican moles, if you make them yourself, might be good; the classic Mole Poblano is gluten-free.

The Guatemalan moles, while bearing a resemblence to their Mexican counterparts, might not be as safe - I've seen breadcrumbs in a number of their recipes, so be careful if dining in a Mayan home, I guess.
