What could I use to replace cream of chicken?

The line of soups called Imagine Soups is usually safe for individuals on a gluten-free diet, but always checks the labels just in case. Otherwise, I would suggest making it yourself! Just find any recipe that looks good to you, and substitute the all-purpose flour for gluten-free flour. For reference on good flours go to Bob's Red Mill or Pamela's Products online. Use Whole Food's 365 organic chicken broth, as it is gluten-free.

Try Progresso Cream of Mushroom. It is gluten free.

... one could simply thicken the broth with egg yolks. Beat a little cream into the egg yolks, slowly beat a little of the cooked broth into the mixture, and then, over very low heat, put what results back into the broth, stirring until thick.

No need to look for specialty flours.

I have tried soy flour many times and it tastes even better than wheat flour.
