Try using this flour: http://www.bobsredmill.com/catalog/index.php?action=showdetails&product_ID=199 <http://www.bobsredmill.com/catalog/index.php?action=showdetails&product_ID=199> Take a cannoli recipe of your choice from the internet or a cookbook, and use the all-purpose flour in substitution for the flour in the recipe. Unfortunately, I am not aware of a commercially-produced gluten-free cannoli but if I do, I will certainly send it your way!
