You have several products to use in the world of Chinese cooking. The main things I suggest staying away from are gluten-containing soy sauce and of course wheat flour. Tamari is a great substitute for gluten-containing soy sauce. After that, you are safe using whatever you like! Many Chinese dishes request or include prepared bottled sauces that you can buy in the store... always remember to read the labels as you are shopping! For example, gluten can be very sneaky and wind up in your teriyaki sauce if you are not careful.

I had chicken and brocellery bbq spare ribs,pork fried rice. My stomach swelled up immediately . Is there any gluten in what I ate. Does chinese food have gluten in it?

I'm no expert, but I do a lot of Chinese eating and some Chinese cooking. If certain soy sauces contain gluten, that may well have been the source of your problem, since soy was probably used in the bbq sauce for the spare ribs. There are some Chinese dishes that actually use fried gluten, but I haven't seen this much in Chinese restaurants that cater to Westerners.

I too have favorite recipes with hoisin. That and wostershire sauce. What can be used as a substitute?

Fear not there were gluten free versions of Soy, Hoisin & Worcestershire sauces.

Chinese restaurants can be a source of much cross contamination. Traditionally woks are never really scrubbed clean [it destroys the seasoning]. Since non gluten free items have been cooked in them, any GF food that is cooked it them will be contaminated.

Edward and Sons make Premier Japan Hoisin & Teriyaki that are GF.

LaChoy Soy Sauce is GF. LaChoy is a Kraft product. Kraft has excellent labeling practices. If gluten is found in product, they will tell you.

I am finding that not only can I not have anything with 'modified food starch'; I believe I also have to avoid any item with the word 'modified' in it.

VH brand sauces etc are great and they are gluten free. They have modified food starch but it is NOT gluten contaminated. They are great and really speed up making chinese food at home.
Also - rice noodles are great, even if you have to look in the Thai section
