Living a gluten-free lifestyle can be complicated. Celiac disease is just one of the many health conditions that require a gluten free diet. Approximately one percent of Americans have celiac disease and many more are interested in a gluten-free diet. Researchers at the Mayo Clinic published their research in July, 2009 that shows that celiac disease has actually become more common in just the past 50 years! As the number of people diagnosed with celiac disease increases, the demand on the dietitian does too: both from the patient and within healthcare systems. The recommended treatment for the newly diagnosed is consultation with a knowledgeable dietitian. GREAT Dietitians-Healthcare and Clinical Settings aims to train both the individual learner and the institution. Dietitians and nutritionists serve as a bridge to help the patient get safely from diagnosis to self-reliance. They also bear the responsibility of being the resource for others implementing gluten-free food service protocols in a healthcare facility. The 22-page manual that accompanies the visual learning module is a resource guide designed to be referenced again and again. GREAT Dietitians – Healthcare and Clinical Settings offers a solid foundation to understand celiac disease and its many manifestations. It further allows the learner to recognize challenges that the person following a gluten-free diet may be experiencing, and provides techniques to support their needs.

After completing this training program, participants will be able to:

  1. Define the manifestations and prevalence of celiac disease.
  2. Support food service personnel with the development and implementation of a gluten-free menu.
  3. Be a resource to implement the gluten-free diet facility-wide in a healthcare facility.
  4. Counsel people with celiac disease on Medical Nutrition Therapy.
