As One Celebration Ends, Another Begins

While the excitement of Celiac Awareness Month is winding down, the National Foundation for Celiac Awareness (NFCA) is gearing up for yet another celebration – our 10th anniversary.

It’s hard to believe it has been 10 years since I started the foundation.  It doesn’t seem like a decade has past at all, that is, until I start thinking about all of the things we have achieved together as the gluten-free community. 

When I was diagnosed over 20 years ago, no one had heard of the gluten-free diet.  I even had to special order my food from Canada!  I’m sure there are more than a few of you reading this who can relate.  Now, we can walk into stores and find gluten-free alternatives and find more options on restaurant menus than ever before.  There has never been a stronger focus on celiac disease in the research world; potential medications and a vaccine are in development, and new information emerges often from top celiac disease researchers.  So much has changed for people living with celiac disease and non-celiac gluten sensitivity in the past 10 years.  I am so incredibly proud and honored to have been a part of the transformation.

While major strides have been made for the gluten-free community, we still have our work cut out for us.  More restaurants need to understand how to safely prepare gluten-free foods.  College students need to know they can count on their schools’ foodservice staff to provide them with a variety of healthy gluten-free options – free from cross-contamination.  Our children need to go to school and not worry about what’s in their lunchboxes and if the other students will tease them for it.  Primary care doctors need to recognize the many elusive symptoms of celiac disease and gluten sensitivity, and so does the general population so they don’t go undiagnosed for years, questioning why they’ve felt so sick for so long.

I am so incredibly proud of the work NFCA has done over the last decade, and I look forward to the next 10 years!  We will continue to make progress in raising awareness of gluten-related disorders and the medical need for a gluten-free diet.  And I thank all of you for your support and appreciation, whether you’ve been with us for the past 10 years or if you are newly diagnosed and just finding our community.

With Memorial Day behind us, summer is unofficially here at last!  In honor of the warm weather to come, I’m sharing these tasty recipes for you to enjoy all summer long.

Toffee Crisp Cake

NO BAKE GLUTEN-FREE TOFFEE CRISP CAKE
This dish is very sweet (the kids loved it!).  Serve this at your next party and everyone will be talking about this tasty gluten-free dessert.

 

QUINOA AND FRUIT SALAD WITH POPPY SEED DRESSINGQuinoa Salad
With fresh fruits coming into season, now is the time to enjoy a savory salad with some fruit.  This is great as a side dish with any grilled meat or fish.  You can even prepare the quinoa with dressing the day before, but be sure to only add the fruit a short while before serving.

What tips do you have for parents sending their gluten-free kids to a party or event that won't have gluten-free options?

No one wants to feel left out—especially at a party. Now imagine that it’s a kids’ party. Exactly.  Even worse. So, what do you do when you know that your kid is going to a party where there won’t be any gluten-free food? Here are some tips to make sure your kid’s the life of the party:

Talk about it—again and again.
This will be an ongoing conversation and for good reason. There’s no shame in being gluten-free and your child needs to understand that. Kids can be tough on kids, but attitude—and confidence—is everything. Being sure of himself or herself will sway kids in the opposite direction; they’ll want to make sure your child is happy and healthy. I watched this firsthand with my son Isaiah. His friends were always concerned that he had something he could eat. It was amazing to witness the kindness and compassion kids can have for each other.

Tell the host.
Give the party organizer a head-up so that there is some awareness and no surprises. Also, let them know that there’s no reason to plan the party any differently. Parents care and they want all of the kids to have fun at a party. They will likely step up to the plate and make sure there are some gluten-free options, even if it’s just stuff that’s naturally gluten-free, like fruit snacks, fresh veggies or potato chips.

Either way, bring your own snacks and dessert.
Take control of the situation so that your child feels in control. Bake up a batch of fun gluten-free doughnuts, like these Vanilla-Glazed Chocolate Chip Doughnuts or some cookies, like Slice-n-Bake Oatmeal Cookies. Also, pack some of your kid’s favorite snacks for him to take along. Plus, bring extras for all partygoers to enjoy. This lets your child share his food with his or her peers and take pride in the process. That makes everyone happy.

We're Celebrating our 10th Anniversary!

On June 25, 2013, it will be 10 years since Alice Bast signed the documents to officially found the National Foundation for Celiac Awareness (NFCA).  Alice started out working alone in a room on the third floor of her home in Flourtown, PA. She was quickly joined by Nancy Ginter, who is still NFCA’s Director of Operations.  The rest, as they say, is history.

Now, NFCA has 10 full time staff members in an office of our own.  And while many things have changed, one thing has not: our dedication to increasing diagnoses, advancing research and improving the quality of life for those on a lifelong gluten-free diet. 

NFCA will be launching a dedicated web section to celebrate this important milestone. Look what’s in store:

National Restaurant Association Show Recap: NFCA Busts Gluten-Free Myths

There's more to gluten-free food preparation than just using gluten-free ingredients, and NFCA is on a mission to spread that message! That’s why NFCA’s Director of Gluten-Free Industry Initiatives Beckee Moreland and Chef Jehangir Mehta, one of NFCA's chef ambassadors and Food Network’s “Next Iron Chef” finalist, headed out to Chicago for the National Restaurant Association (NRA) Show 2013 which draws more than 60,000 attendees from the foodservice industry each year.

NFCA’s President Alice Bast and Vice President Jennifer North joined Beckee and Chef Mehta at the NRA Show.   Together, they worked to let the chefs and other foodservice professionals know about the GREAT Kitchens program, an online gluten-free training course offered by NFCA.  The team was pleasantly surprised to find that attendees were actively seeking out the GREAT Kitchens booth to learn more about gluten-free food preparation – a good sign that gluten-free needs are more of a priority for foodservice operators.  The team even wore their “Ask Me About Gluten-Free” buttons to get a buzz going at the show. 

Last year, NFCA quizzed chefs on gluten-free ingredients and cross-contamination risks.  Less than 50% of chefs could name a gluten-containing ingredient other than wheat.  This year, Beckee is proud to report many more attendees passed this year’s gluten-free quiz.  Many, however, underestimated the number of people needing a gluten-free diet, as well as the amount of requests for gluten-free options in restaurants. 

Not only did NFCA staff work to raise awareness on the showroom floor, but Beckee and Chef Mehta put the medically necessary gluten-free diet in the spotlight during their presentation on the “Top 8 Myths about Gluten-Free Menus.”  They even had a full house of attendees!

Proposed Bill on Labeling Gluten in Medications

People have the right to know what’s in their food and that same principle should be applied to medications.  That’s the idea behind a bill proposal that would require drug makers to claim gluten on the product label.  Sponsored by two US State Representatives, the proposed bill is gaining attention from the public and the media.

Disney Channel Pulls Episode of Kids’ Show in Response to Online Petition from Gluten-Free Community

The hit Disney Channel show “Jessie” aired a new episode on Video-on-Demand that caused quite a stir in the gluten-free community.  Upset by the way the gluten-free diet was portrayed on the show, Amy Raslevich, a mother of two gluten-free kids, started an online petition to have the episode pulled from regularly scheduled programming.  The community’s voice was heard and Disney pulled the episode.

College Survey Sparks Interest in Gluten-Free Dining Options

Last month, NFCA released the results of a survey on living gluten-free at college, including an infographic that highlighted key stats. Among the findings: 61% of the nearly 1,000 gluten-free college students surveyed said they did not feel comfortable eating in their dining hall. In response to the survey, an article in the USA Today College edition interviewed gluten-free students who felt their schools were making progress in meeting special dietary needs. NFCA President Alice Bast published an editorial on the topic in the Huffington Post, noting the social and emotional challenges that go beyond the dining halls. NFCA also authored an article in Campus Dining Today, the magazine for members of the National Association of College and University Food Services (NACUFS). The article outlined how school foodservice teams can take a team-based approach in addressing gluten-free needs, and demonstrated NACUFS' commitment to both its members and students nationwide by providing education and actionable ideas to meet this growing dietary need.

NFCA’s Celiac Awareness Month Toolkit Gets Nod from Bloomberg News

Bloomberg News shared an article highlighting books and eateries that truly get gluten-free and are considered valuable resources for people living with gluten-related disorders.  NFCA is excited to have our Celiac Awareness Month 2013 Toolkit featured among other popular gluten-free resources!

Radio Show Talks Celiac Disease during Celiac Awareness Month

NFCA's Vice President Jennifer North was a special guest on Saturday Mornings with Joy Keys, an online radio show.  Jennifer answered questions about celiac disease and gluten sensitivity with Cheryl Harris, MPH, RD. Together, the two covered why the gluten-free diet isn’t a fad and who really needs to adopt the lifestyle.

I Am…Cards

16 year old Taylor Miller is known for his blog, "Gluten Away," where he shows what it’s like to be a teen living with celiac disease. He knows firsthand how tough dining out can be when you’re gluten-free or have food allergies, so he created the brand new “I Am…Cards.”  The idea is simple: Fill out the card with your name, table number and check off which foods you can’t have.  Send it off with your server to give to the chef. Easy right? While the cards can’t guarantee your meal will be safe, having these on hand will definitely help stress how important it is to have your meal prepared appropriately.
