Hi. I'm Teresa. I do not have celiac, but my
husband was diagnosed with it about three years ago. It is such a long story.
Sometimes I feel like I have to deal with the disease more than he does. Before
he was diagnosed I delt with his mood swings and now I have to create meals
every night that we can all eat as a family. So, I guess I'm telling my story
so I can get sympathy. We think the death of his Mother combined with financial
stress triggered it. Although when his sisters tell childhood stories,
sometimes I think he has always had it. I saw a picture of him one time when he
was about one year old. His stomache was bloated like a malnourished child in a
foreign country. We wonder if his Mother had it too because she was extremely
bloated. We would ask doctors about it and they said they did not know why she
was so bloated. We thought that Johnny was grieving over his Mother's death.
But as time went on and it seemed as though he should be getting better, he was
still depressed. He would get angry real easy and he slept a lot. Our daughter
claimed one afternoon, "I want my Daddy back!" I kept telling him to
go to the doctor and get on an anti depressant. I thought our marriage was not
going to last. We had no idea he was sick. WE even decided that he was going
through mid life crises except that he did not want to buy a motorcycle. His
sister had been diagnosed with celiac about a year before and she kept telling
Johnny to be tested for it, but he just shrugged her off. While he was talking
to the doctor, he decided to half mention what his sister had told him. A
simple blood test, a change of diet and within a week he was a different man.
It was like a miracle. Dealing with meal plans, eating out, and family get-togethers
is a breeze compared to the year he was sick. My most discouraging problem now
is the grocery store not carrying the products that he needs. Wild Oats is far
from our house and ordering is so inconvenient. I usually just cook old fashion
meals. Tonight is Hormell ham, dried Northern beans(cooked all day in crock
pot), and white rice. I'm out of potato starch so no cornbread tonight. Thanks
