Sprinting Past Celiac Disease

Stephanie Rothstein set to compete at the 2012 US Track and Field Olympic Trials.

With U.S. Track and Field Olympic trials quickly approaching, a member of the celiac disease community is among one of the standout hopefuls looking to earn a chance to represent America at the 2012 London Summer Games.

Stephanie Rothstein, who placed 2nd at the 2010 USATF 20k Championships and 19th at the 2010 World Half Marathon Championships, was diagnosed with celiac disease in 2009.

Now diagnosed, Stephanie is looking to best her 12th place finish in the 10k at the 2008 Olympic Trials meet.

In a brief ‘get to know you’ interview with USA Track and Field, Stephanie offers up a few fun facts about herself:

Best part of being a marathoner: The insatiable hunger.
Worst part of being a marathoner: The insatiable hunger.
If she could be an Olympian in another sport:Gymnastics
Run with music? No.
Tattoos? Yes, prostate cancer ribbon on lower back in memory of her father
Last song purchased: Usher’s “Without You”
Last book read: “The Girl Who Played with Fire” by Stieg Larsson
Wheels: White Toyota Solara
Mountains or beach? Mountains

Stephanie also confesses that she makes a mean batch of gluten-free pancakes!

And that’s not all. Off the track Stephanie has joined forces with some other standout athletes to launch a gluten-free business venture, Picky Bars. According to the website, Stephanie’s diagnosis was what inspired her to create the gluten & dairy free energy bars.
