Celiac Disease Gaining Attention from School Nutrition Association

Food-related issues in children were the big topic of the June/July 2013 issue of School Nutrition, a magazine put out by the School Nutrition Association, an organization dedicated to “educating and empowering members to provide healthy meals to foster an environment where children achieve overall wellness and lifelong success.”

The article focused on food-issues ranging from eating disorders to celiac disease.  The article, written by Gabriela Pacheco, RD, LD, SNS, draws attention to the fact that more children than ever are in need of gluten-free options due to the rise in the prevalence of celiac disease.  This coverage of gluten-related disorders in a school nutrition-focused publication is a big step for awareness of celiac disease and non-celiac gluten sensitivity.

Pacheco was the panelist in the free National Foundation for Celiac Awareness (NFCA) August 2012 webinar, “Back to School: Preparing to Educate School Administrators on the Importance of Gluten-Free.”  She is slated to speak with NFCA President Alice Bast at the upcoming School Nutrition Association Conference on the importance of the gluten-free lunch for children with gluten-related disorders.
