The National Foundation for Celiac Awareness (NFCA) through the NFCA GREAT Association and GREAT Food Service will produce a Gluten-Free Showcase Pavilion and Educational Session at the 2010 National Restaurant Association Show, held May 22nd through 25th in Chicago. “Everybody knows somebody that’s a celiac,” said Chuck Cundari, president of Canbrands Specialty Foods, referring to people suffering from celiac disease who require a gluten-free diet. “[Restaurateurs] are saying, ‘That’s something I should have in my restaurant.’ It’s not a want, it’s a need.
