A new report finds that nearly 30% of Americans are trying to eliminate or cut down on gluten in their diets. We know that an estimated 1% of Americans have celiac disease, and an estimated 6% of Americans have non-celiac gluten sensitivity, but many of these individuals are still undiagnosed. So, why the rise in people eating gluten-free? Could some of these individuals have a gluten-related disorder? How can we encourage more awareness about celiac disease and the importance of getting tested?
