The only treatment for celiac disease is the gluten-free diet. In an effort to improve treatment options and diet adherence, NFCA places a special emphasis on cooperating with and empowering the entire spectrum of those involved in delivering gluten-free food options.
NFCA's Gluten-Free Resource Education and Awareness Training (GREAT) includes two programs for the dietetic and nutrition community.
Continuing Education Courses:
GREAT Kitchens is designed for registered dietitians, dietetic technicians, dietary managers and nutrition professionals who work in or consult with the food industry. This course addresses core competencies needed to guide management and staff in instituting and maintaining gluten-free initiatives in dining establishments, grocery stores, colleges and universities, K-12 schools, and institutional foodservice.

GREAT Dietitians – Healthcare & Clinical Settings is designed for registered dietitians, dietetic technicians and nutrition professionals who work for or consult with healthcare facilities and those in private practice. This course covers key topics like introducing a gluten-free menu, expanding gluten-free options facility-wide, and counseling patients on medical nutrition therapy through the gluten-free diet.
