Kayla is 16 and has celiac disease. She's a pageant girl who represents gluten-free kids across the U.S.
Celiac disease hasn't kept 16-year-old Kayla from living her dreams. She competes in pageants across the country and recently won Miss New Jersey Teen 2011! Here's more about her:
How long have you been gluten-free?
I have been gluten free for 2 years. I was diagnosed when I was 8 years old. I struggled from that time till about 14 living gluten free.
What is your favorite gluten-free food?
I have so many favorites! My favorite for right now would be Kinnikinnick KinniToos Chocolate Vanilla Sandwich Crème Cookies
What’s the coolest thing you’ve done since going gluten-free?
I hosted a fashion show fundraiser for the NFCA this past May 2011.
Describe your perfect gluten-free day:
Breakfast: Bisquick Gluten-Free Pancakes with M&Ms inside, orange juice, and strawberries.
Lunch: Going with my friends to Pizza Fusion and ordering a large gluten-free half pepperoni and half cheese pizza with Cane Cola. Yum!
Dinner: Grandpa’s gluten-free lasagna with a side salad
What is your dream for the next generation of gluten-free kids?
That all school lunch programs would provide gluten-free lunches.
If you could tell gluten-free kids one thing, what would it be?
It would be to embrace being gluten-free. Have your friends that aren’t gluten-free try your food. Chances are, they are going to like just as much as you do!
