The increase in celiac disease and gluten sensitivity has begged the question, “Why now?” Experts hold different theories on the increased prevalence, ranging from the hygiene theory to infant feeding practices to the actual hybridization of wheat, a primary source of gluten. NFCA’s Webinar will focus on the latter theory, with an explanation of the ways in which wheat is processed and eaten has changed dramatically in the 21st century.
