Yellow Rice with Cranberries

Chicken and Yellow Rice with Cranberries

Prep Time: 10 minutes
Cook Time: 30 minutes

Makes 4 servings.

Ingredients: 

  • 2 tsp. oil

  • 1/2 cup chopped celery

  • 1/2 cup chopped onion  

  • 2 cups water

  • 1 package Zatarain's Yellow Rice Mix 

  • 1/2 cup dried cranberries or dried cherries

  • Toasted slivered almonds (optional)

Directions:

  1. Heat oil in large skillet on medium heat. Add celery and onion; cook and stir 4 minutes or until softened.

  2. Stir in water, Rice Mix and cranberries. Bring to boil. Reduce heat to low; cover and simmer 25 minutes or until most of the water is absorbed and rice is tender. Remove from heat. Let stand 5 minutes. Fluff with fork before serving. Sprinkle with almonds, if desired.
