What ingredients are in Domino’s® Gluten Free Crust?           

Domino’s® Gluten Free Crust is made with Water, Rice Flour, Rice Starch, Potato Starch, Olive Oil, Evaporated Cane Juice, Tapioca Flour, Potato Flour, Fresh Yeast, Avicel, Salt, and Calcium Propionate.

If the crust is gluten-free, why is the entire pizza not gluten-free?

A third party testing facility has measured the amount of gluten in Domino’s Gluten Free Crust and determined it to be less than 20 parts per million. However, the Gluten Free Crust pizza is made in a common kitchen and does use the same ingredients and utensils as their regular pizzas.

What is the preparation process for pizzas that use Domino’s® Gluten Free Crust?

  • The Gluten Free Crust is stored in a separate area of the walk-in cooler until it is ordered.
  • The Gluten Free Crust pizza is made on the same pizza screen and uses the same makeline, ingredients, and utensils as all other pizzas.
  • Employees use the same pizza peel and pizza cutter on the Gluten Free Crust pizza as all other pizzas.
  • There is no airborne flour in the store. Domino’s® ingredients that contain gluten and should not be added to a Gluten Free Crust are:
  • Philly meat
  • Alfredo sauce
  • Cheddar sauce

Where is Domino’s® Gluten Free Crust produced?

Domino’s® Gluten Free Crustis recognized by a third party as adhering to “free of WRBO” (wheat, rye, barley, oats) production standards.

Is there gluten exposure in the store? 

Domino’s conducted third party cross contamination studies of the pizzas made on the Gluten Free Crust. Results show, while there is some gluten in the store, the amount of gluten exposure is low. You can watch a video that explains while our Gluten Free Crust is free from gluten, there is gluten in our common kitchen.

Are there any substitutions for Domino’s® Gluten Free Crust pizza?

No. All of the other Domino’s crust and bread options contain gluten.

Can Domino’s make special arrangements to accommodate my special requests?

Domino’s makes an effort to meet your needs. However, Domino’s corporate policy is for team members to make products to specs. Due to the size of Domino's operations, they cannot guarantee that they can meet your special request.

Why is NFCA supporting Domino's® Gluten Free Crust?

The National Foundation for Celiac Awareness sees this as a big step in the right direction to both benefit and educate customers concerned about gluten. NFCA does NOT recommend this pizza for those with celiac disease or gluten-related disorders.

What was NFCA's role in this initiative?

Domino’s Pizza® contacted NFCA to better understand celiac disease and gluten-related disorders, because they wanted to ensure what they offer is the right product for customers.

NFCA observed Domino’s® operations and worked closely with management to better educate Domino’s® on celiac disease and gluten-related disorders, and to define who the appropriate consumer is for Domino's® Gluten Free Crust.

Currently, Domino's® operational procedures do not allow stores to avoid all cases of potential cross-contact. Therefore, NFCA and Domino's® are notifying customers of the risks so they can make informed choices when ordering.
